Scallops Fried Rice

This recipe is simple and quick to make when you have a long day after work or even just something that you can cook up easily  before curling over your sofa to watch your favorite TV show.

You can always substitute the scallops for chicken meat, tuna, or tofu or tempeh (fermented soybean cake, from Indonesia) based on what you have.  Feel the need to be a little bit healthier, try adding few florets of cauliflowers and some diced carrots along.

How To Make Scallops Fried Rice

Ingredients

  • 6 pcs of medium sized scallops (keep 3 whole scallops aside and cut the rest into small cubes)
  • 1 medium bowl of leftover rice serving 1 person. (Leftover rice is the best for making fried rice as it won't turn soggy and holds its texture well compared to a just-cooked warm rice)
  • 2 tbsp of butter
  • 2 tsp of olive oil
  • 2-3 cloves of garlic (chopped)
  • 2 tbsp of oyster sauce
  • 1 tbsp of light soy sauce
  • a few dashes of white pepper
  • 2-3 tbsp of cilantro (chopped); alternatively you can use spring onions (chopped)
  • salt and black pepper for seasoning

Instructions

  1. Heat the pan up with butter in medium high heat
  2. Add in garlic and fry it for one minute till it turns slightly golden
  3. Add in the cubed scallops. Sauté it for 1-2minutes
  4. Next, add in the Oyster sauce, mix it all together properly until the sauce is coated evenly among the scallops
  5. Put in the cooked rice and stir them all together until mixed nicely
  6. Season up with the Soy Sauce, and Pepper. Keep stirring till the seasoning are evenly distributed
  7. Add in the Cilantro, stir it well for a minute
  8. Place the fried rice on a plate and place it aside till we sear up the remaining scallops
  9. Season the 3 whole scallops with salt & black pepper
  10. Take another clean pan, heat up 2 teaspoon of Olive oil in high heat. Gently lay in the scallops and sear them  for 1 1/2 minutes on each side
  11. Once cooked, place it on top of the fried rice and serve
